Bacon and Broccolini Omelette

What you need

  • 80g bacon, finely chopped
  • 60g PHILADELPHIA Block Cream Cheese, softened
  • 1/4 cup grated Swiss cheese
  • 5 eggs
  • 2 cups broccolini florets, blanched
  • black pepper, to taste

How to make it

  1. SAUTE the bacon in a greased 20cm frying pan.
  2. WHISK together the PHILLY, cheese and eggs until mixed. Stir in broccolini and pepper.
  3. POUR the PHILLY mixture over the bacon in the pan. Cook over a gentle heat for 5-8 minutes or until cooked through. (If necessary, top the frypan with a lid to aid cooking or place under a hot grill). Cut in half and serve.
