Baked Mushrooms with Marinated PHILADELPHIA

What you need

  • 180g PHILADELPHIA Block Cream Cheese, cut into small cubes
  • 1/2 cup olive oil
  • 2 garlic cloves, finely chopped
  • 2 x 5 cm strips lemon rind
  • 1 tablespoon fresh oregano leaves
  • 1 tablespoon fresh thyme leaves
  • 1 small red chilli, finely sliced
  • black pepper
  • 12 medium (approx. 7cm) portobello mushrooms, stems removed
  • rocket leaves

How to make it

  1. COMBINE PHILLY with the oil, garlic, lemon, herbs, chilli and pepper. Cover and set aside for at least 30 minutes.
  2. ARRANGE mushrooms in a large baking dish. Divide the PHILLY pieces between them, and drizzle with remaining marinade. Bake at 160°C fan-forced for 15 minutes, or until tender.
  3. SERVE on a bed of rocket leaves, and accompany with crusty bread.
