Serves 4

What you need

  • 125g PHILADELPHIA Light Spreadable Cream Cheese
  • 1/2 cup basil leaves, finely chopped
  • 2 teaspoons white balsamic vinegar
  • salt and pepper, to taste
  • 2 teaspoons oil
  • 2 small zucchini, sliced lengthways
  • 1 large yellow capsicum, cut into wide strips
  • 4 small baguettes (or 4 baguette portions), sliced 3/4 through
  • 1/2 cup basil leaves, extra
  • 4 thin slices prosciutto

How to make it

  1. COMBINE PHILLY, basil, vinegar and seasonings until smooth.
  2. HEAT oil in a grill pan and chargrill zucchini and capsicum.
  3. SPREAD the PHILLY mixture over the base of the baguettes. Top with basil leaves, zucchini, capsicum and prosciutto. Serve.
