What you need

  • 1 cup reduced fat milk
  • 2 eggs, lightly beaten
  • 1/4 cup unsweetened apple juice
  • Finely grated rind of 1 orange
  • 2 cups SR flour
  • 1/2 cup wholemeal SR flour
  • 1/3 cup caster sugar
  • 1 Granny Smith apple, grated
  • 1/2 cup blueberries
  • 125g tub PHILADELPHIA Light Spreadable Cream Cheese

How to make it

  1. WHISK together the milk, eggs, juice and rind.
  2. COMBINE dry ingredients and fruit in a large bowl. Make a well in the centre. Add milk mixture and mix until just combined. Spoon into 12 lightly oiled 1/2 cup capacity muffin pans and bake at 200ÂșC for 15-20 minutes until cooked.
  3. WHEN cool, halve and spread with PHILLY.
