What you need

  • 1 1/2 cups sweet biscuit crumbs
  • 1/3 cup butter, melted
  • 500g block PHILADELPHIA Cream Cheese, softened
  • 1/3 cup caster sugar
  • 2 tablespoons lemon juice
  • 1/2 cup cornflour
  • 1 teaspoon baking powder
  • 3 x 55g eggs, beaten
  • 3/4 cup sultanas, soaked in
  • 1/4 cup brandy, overnight
  • icing sugar

How to make it

  1. COMBINE biscuit crumbs and butter, press into the base of a 22cm spring form pan. Chill.
  2. BEAT PHILLY until smooth, stir in all remaining ingredients. Pour into crumb crust and cook in oven on 150°C for 1 hour. Allow to cool in oven.
  3. DUST top with icing sugar and make a criss-cross pattern with heated metal skewer (over a hot plate or gas flame) by lightly pressing onto icing sugar.
