What you need
1 1/2 cups sweet biscuit crumbs
1/3 cup butter, melted
500g block PHILADELPHIA Cream Cheese, softened
1/3 cup caster sugar
2 tablespoons lemon juice
1/2 cup cornflour
1 teaspoon baking powder
3 x 55g eggs, beaten
3/4 cup sultanas, soaked in
1/4 cup brandy, overnight
icing sugar
How to make it
COMBINE biscuit crumbs and butter, press into the base of a 22cm spring form pan. Chill.
BEAT PHILLY until smooth, stir in all remaining ingredients. Pour into crumb crust and cook in oven on 150
°
C for 1 hour. Allow to cool in oven.
DUST top with icing sugar and make a criss-cross pattern with heated metal skewer (over a hot plate or gas flame) by lightly pressing onto icing sugar.
