Broccolini and Sweet Potato Timbales

What you need

  • 1 medium (300g) sweet potato, peeled and cut into 1 cm cubes
  • 250g PHILADELPHIA Block Cream Cheese, softened
  • 1 cup (250ml) cream
  • 3 eggs, lightly beaten
  • grated rind and juice of 1/2 lemon
  • 1 bunch (200g) broccolini or broccoli flowerettes, chopped
  • 1 tablespoon chopped fresh coriander
  • salt and pepper
  • 60g butter
  • sweet potato chips, to garnish
  • broccolini, blanched, to garnish

How to make it

  1. LINE the bases of 12 x 1/2 cup muffin pans with baking paper.
  2. BOIL, steam or microwave sweet potato until tender.
  3. COMBINE PHILLY, cream, eggs, rind, and juice in a large bowl. Stir in the sweet potato, broccolini, coriander, salt, and pepper. Spoon the mixture into the prepared pan. Bake at 160ÂșC for 20-25 minutes or until set.
  4. GENTLY run a knife around the outside of each timbale before removing from pan. Invert timbales onto serving plates, and decorate with sweet potato chips and broccolini. Serve immediately.
