Chocolate Chunky Cookie Dough Cheesecake

What you need

  • 1½ cups chocolate biscuit crumbs
  • 100g butter, melted

Cookie Dough

  • 60g butter, softened
  • ¼ cup brown sugar
  • ¼ cup caster sugar
  • 2 tablespoons water
  • ½ cup plain flour
  • 220g CADBURY Dark Cooking Chocolate, chopped


  • 750g PHILADELPHIA Block Cream Cheese, softened
  • 400g can sweetened condensed milk
  • 3 eggs

How to make it

  1. COMBINE the biscuit crumbs and butter. Press into the base of a greased and paper lined 24cm springform pan (ensure the paper extends 5cm above the top of the pan). Chill.
  2. CREAM the butter and sugars with an electric mixer until light and fluffy. Stir in the water and flour, then add the chocolate chunks, mixing until well combined. Set aside.
  3. BEAT the PHILLY until smooth. Add the condensed milk and eggs, mixing until just combined. Pour the filling over the prepared base then place teaspoonsful of cookie dough onto the PHILLY mixture. Bake in a moderately slow oven 160°C for 40–45 minutes or until just set. Cool in the oven with door ajar. Chill.
