What you need
300g sultanas
300g raisins
100g apricots
100g dates
250g block PHILADELPHIA Light Cream Cheese, softened
1/2 cup brown sugar, lightly packed
1 1/2 teaspoon nutmeg
1 1/2 teaspoon cinnamon
1 teaspoon bicarbonate of soda
1 tablespoon instant coffee
1 cup water
2 eggs
1 1/4 cups plain flour
1/2 cup self-raising flour
How to make it
COMBINE fruit, PHILLY, sugar, spices, bicarbonate of soda and coffee and water in a saucepan. Bring to the boil, stirring, then allow to cool.
ADD the eggs and mix well. Sift in the flours, and stir until combined. Pour into a lined 23cm square pan.
BAKE at 180°C for 55-60 minutes or until a skewer inserted in the centre comes out clean.
