What you need

  • 3 egg whites
  • 1 cup caster sugar
  • 1 tablespoon lemon juice
  • 250g PHILADELPHIA Block Cream Cheese, softened
  • 2 tablespoons icing sugar
  • 1 tablespoon instant coffee, dissolved in 2 teaspoons boiling water

How to make it

  1. BEAT whites in a small bowl until stiff peaks form. Gradually beat in sugar until dissolved, then gently stir in lemon juice. Spoon tablespoons of meringue mixture onto lined baking trays. Bake at 130°C for 30 minutes or until crisp and dry. Cool meringues on trays.
  2. BEAT PHILLY with a wooden spoon until smooth. Add icing sugar and coffee mixture and beat until well mixed.
  3. SANDWICH meringues together with coffee cream and serve with a cup of coffee.
