Cream Cheese Crepes

What you need

  • 1 1/4 cups milk
  • 1 cup plain flour
  • 2 eggs beaten
  • 1 cup caster sugar
  • 125g block PHILADELPHIA Cream Cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup caster sugar
  • 1 cup strawberry puree
  • 1/4 cup Cointreau (optional)
  • 2 tablespoons icing sugar, to taste

How to make it

  1. BLEND all crepe ingredients.
  2. COOK 3 tablespoons mixture in a little butter in frying pan, to make each crepe. Repeat to make 6 crepes.
  3. BEAT PHILLY until soft, beat in sour cream and caster sugar, use to fill crepes, roll up, keep warm.
  4. COMBINE strawberry puree, Cointreau and sugar in a small saucepan, heat gently until sugar is dissolved. Pour over warm crepes, and serve immediately.
