Creamy Pumpkin Soup with Herbs

What you need
1 tablespoon butter
1 large onion, diced
1.5kg butternut pumpkin, peeled, cubed
1 litre chicken or vegetable stock
500ml milk
salt and pepper, to taste
125g PHILADELPHIA Light Spreadable Chive & Onion, at room temperature
How to make it
MELT the butter in a large saucepan, add onion and saute 3-5 minutes. Add the pumpkin and stock. Bring to the boil and simmer for 20 minutes or until pumpkin is tender.
PUREE the soup in a food processor or blender, return to a clean saucepan and add the milk. Season to taste. Heat again before serving but do not boil.
SERVE soup in a large bowl with a dollop of PHILLY.
