Creamy Pumpkin Soup with Herbs

What you need

  • 1 tablespoon butter
  • 1 large onion, diced
  • 1.5kg butternut pumpkin, peeled, cubed
  • 1 litre┬áchicken or vegetable stock
  • 500ml milk
  • salt and pepper, to taste
  • 125g PHILADELPHIA Light Spreadable Chive & Onion, at room temperature

How to make it

  1. MELT the butter in a large saucepan, add onion and saute 3-5 minutes. Add the pumpkin and stock. Bring to the boil and simmer for 20 minutes or until pumpkin is tender.
  2. PUREE the soup in a food processor or blender, return to a clean saucepan and add the milk. Season to taste. Heat again before serving but do not boil.
  3. SERVE soup in a large bowl with a dollop of PHILLY.
