What you need

  • 125g block PHILADELPHIA Light Cream Cheese, softened
  • 1/4 cup hazelnuts, toasted, skins removed and finely chopped
  • 1 1/2 tablespoons honey
  • 1 egg, lightly beaten
  • 1 teaspoon finely grated lemon rind
  • 4 sheets filo pastry
  • light olive oil spray
  • 2 Pink Lady apples, halved, cored and thinly sliced
  • 1 tablespoon raw sugar

How to make it

  1. COMBINE PHILLY, hazelnuts, honey, egg and lemon rind until smooth.
  2. LAY one sheet of filo onto bench top, spray with oil, and top with another sheet. Continue with remaining sheets. Cut stack into 8 pieces. Push the filo pieces into 8 greased 1/2 cup capacity muffin tins.
  3. DIVIDE the PHILLY mixture evenly between the 8 pastry bases. Top with apple slices then sprinkle with sugar. Bake at 190ºC for 15-20 minutes until golden and filling is cooked. Serve.
