What you need
1 cup chopped dates, roughly chopped
1/4 cup glace ginger, finely chopped
1 teaspoon bicarbonate of soda
1 1/2 cups SR flour
1/2 cup brown sugar
1 teaspoon mixed spice
1 egg, lightly beaten
125g tub PHILADELPHIA Light Spreadable Cream Cheese
How to make it
PLACE the dates, ginger and bi-carb in a bowl. Pour 1 cup boiling water over the top and stand for 10 minutes.
COMBINE the flour, sugar and spice. Fold in the date mixture and beaten egg. Pour into a lined 20 x 10 cm loaf pan. Bake at 180ÂșC for 40-45 minutes or until an inserted skewer comes out clean. Allow to cool on a cake rack.
CUT into slices and serve spread with some PHILLY.
