Delicate Peach and Filo Dessert Stack

What you need

  • 4 sheets filo pastry
  • Olive oil spray
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla
  • 420g can peach slices, drained
  • 250g tub PHILADELPHIA Light Spreadable Cream Cheese
  • ¼ cup icing sugar, sifted
  • Icing sugar, extra, for dusting

How to make it

  1. LAY one sheet of filo on a flat bench. Spray with oil and top with another sheet. Repeat this process with remaining filo. Cut into 12 even rectangles. Place onto a lined oven tray and bake in a hot oven 200ºC for 4-5 minutes or until crisp and golden. Cool on a wire rack. 
  2. HEAT the brown sugar and vanilla in a non-stick pan over low heat until dissolved. Add peaches and cook a further minute until coated. Allow to cool. 
  3. COMBINE PHILLY and sugar, mix until smooth. Place one filo rectangle onto a serving plate, gently spread with the PHILLY and top with peaches. Place another filo rectangle on top. Repeat with remaining filo, PHILLY and peaches to make 6 stacks. Dust with icing sugar. Serve immediately.
