Frozen Cherry Macaroon Log

What you need

  • 250g tub PHILADELPHIA Spreadable Cream Cheese
  • 1/2 tablespoon icing sugar
  • 1 tablespoon Cointreau
  • 90g packet chocolate hazelnut macaroons, crushed
  • 12 red glacé cherries halved
  • 100g flaked almonds, toasted
  • 60g dark chocolate, melted

Fruit Coulis

  • 1 punnet puréed raspberries (or strawberries) with
  • 1 tablespoon icing sugar

How to make it

  1. COMBINE PHILLY, icing sugar and Cointreau. Fold through the macaroons and cherries.
  2. SPOON the mixture onto a piece of baking paper, spread to form a rectangle, 30cm x 5cm. Roll up in the paper to form a log, then carefully press into a triangular shape. Freeze until firm.
  3. REMOVE the paper. Thoroughly coat the log with flaked almonds and drizzle with chocolate. Slice and serve with Fruit Coulis.
