Fruit Flan with Cointreau Cream

What you need

  • 250g PHILADELPHIA Block Cream Cheese, softened at room temperature
  • 1/4 cup sugar
  • 1 tablespoon Cointreau
  • rind and juice of 1 orange
  • 3 teaspoons gelatine, dissolved in ¼ cup boiling water, cooled slightly
  • 1/3 cup thickened cream, whipped to soft peaks
  • 25cm round prepared flan base
  • assorted fruit, for decorating (e.g. peaches, kiwi, strawberries)

How to make it

  1. BEAT PHILLY and sugar with an electric mixer for 4 minutes or until smooth.
  2. ADD Cointreau, rind and ¼ cup juice and beat until well combined. Gently beat in gelatine mixture until combined. Fold through cream.
  3. POUR mixture into flan base and chill for 2 hours or until firm. Decorate flan with fruit just before serving.
