What you need
1/2 cup raisins
1/2 cup dried apricots, chopped
1/2 cup pitted dates, chopped
1/3 cup caster sugar
2 tablespoons reduced salt, low fat canola spread
1 teaspoon mixed spice
1 teaspoon cinnamon
1 cup boiling water
1 3/4 cups SR wholemeal flour
1 teaspoon bicarbonate of soda
1/2 cup reduced fat milk
1 tablespoon glace ginger, chopped
125g tub PHILADELPHIA Light Spreadable Cream Cheese
How to make it
COMBINE raisins, apricots, dates, sugar, canola spread and spices in a large bowl. Pour boiling water over, and allow to sit for 5 minutes.
SIFT the flour and bi-carb into the fruit mixture, and add the milk and ginger. Mix well.
SPOON into a lined 18 x 8 cm loaf tin, and bake at 180
°
C fan-forced for 55-60 minutes. Remove from tin and cool on a wire cooling rack.
SPREAD PHILLY over slices of loaf and enjoy!
