Haloumi Rolls with Oregano and Lemon PHILLY

What you need

  • 125g PHILADELPHIA Light Spreadable Cream Cheese
  • 1 tablespoon grated lemon rind
  • 1 tablespoon finely chopped oregano leaves
  • salt and pepper, to taste
  • 2 teaspoons olive oil
  • 200g Haloumi cheese, cut into 4 slices
  • 4 Turkish rolls, split and toasted
  • 40g baby spinach leaves
  • 4 large slices grilled eggplant
  • 1/2 red onion, thinly sliced

How to make it

  1. COMBINE PHILLY, lemon rind, oregano and seasonings until smooth. Set aside.
  2. HEAT oil in a large non-stick frying pan over high heat. Cook the haloumi for 2-3 minutes each side until golden.
  3. SPREAD the PHILLY mixture evenly over the base of each roll. Top with spinach, eggplant, onion, haloumi and roll lid. Serve.
