What you need
125g PHILADELPHIA Light Spreadable Cream Cheese
1 tablespoon grated lemon rind
1 tablespoon finely chopped oregano leaves
salt and pepper, to taste
2 teaspoons olive oil
200g Haloumi cheese, cut into 4 slices
4 Turkish rolls, split and toasted
40g baby spinach leaves
4 large slices grilled eggplant
1/2 red onion, thinly sliced
How to make it
COMBINE PHILLY, lemon rind, oregano and seasonings until smooth. Set aside.
HEAT oil in a large non-stick frying pan over high heat. Cook the haloumi for 2-3 minutes each side until golden.
SPREAD the PHILLY mixture evenly over the base of each roll. Top with spinach, eggplant, onion, haloumi and roll lid. Serve.
