What you need

  • 250g strawberries, chopped
  • 1 tablespoon icing sugar
  • 400g prepared sponge cake
  • 1/4 cup sherry
  • 125g block PHILADELPHIA Light Cream Cheese, softened
  • 1 cup cream
  • 1 tablespoon caster sugar
  • 1 chocolate honeycomb bar, finely chopped

How to make it

  1. COMBINE strawberries and sugar. Set aside.
  2. CUT sponge into finger length strips (or to fit serving glasses). Sprinkle with sherry and line 4 serving glasses.
  3. BEAT PHILLY, cream and sugar until thickened. Stir through honeycomb. Spoon some PHILLY cream into the base of each glass. Top with some strawberries. Repeat layering process, finishing with strawberries.
  4. REFRIGERATE for 2-3 hours or overnight. Garnish with extra honeycomb if desired.
