Lactose Free Baked Cheesecake

What you need

  • 1 ¼ cups dairy free sweet biscuit crumbs
  • 70 g dairy free spread, melted
  • 750g PHILADELPHIA Lactose Free Cream Cheese
  • ¾ cup caster sugar
  • 2 large eggs, lightly beaten
  • grated rind and juice of 1 lemon
  • 1 Tbsp flour
  • berries, to decorate

How to make it

  1. Preheat oven to 150C.
  2. Grease and line the base and sides of a 22cm springform tin.
  3. Combine biscuit crumbs and melted spread and press into the base of the tin. Chill.
  4. Beat the PHILADELPHIA Lactose Free Cream Cheese and sugar with an electric mixer until smooth. Add eggs and beat until smooth.
  5. Stir in lemon rind, juice and flour.
  6. Pour mixture into prepared tin and bake for 45 minutes until slightly wobbly in the centre.
  7. Allow to cool with oven door ajar, then chill.
  8. Decorate with fresh berries and serve.
