What you need

  • 1 cup water
  • ¼ teaspoon salt
  • ½ cup long grain rice
  • 1 cup milk
  • 250g PHILADELPHIA Spreadable Cream Cheese
  • ½ cup caster sugar
  • 3 thinly peeled strips of lemon rind
  • 1 cinnamon stick
  • 1 teaspoon vanilla

How to make it

  1. BRING the water and salt to the boil in a saucepan. Add the rice, cover and cook over a very low heat for 15-18 minutes or until the water has been absorbed.
  2. STIR in the remaining ingredients and simmer uncovered, stirring often, for 40-50 minutes.
  3. REMOVE the rind and cinnamon stick from the rice. Cool slightly before spooning into serving glasses.
