What you need

  • 100g apricots
  • 100g dates
  • 300g sultanas
  • 300g raisins
  • 250g block PHILADELPHIA Light Cream Cheese, softened
  • 125g soft brown sugar
  • 1 1/2 teaspoons nutmeg
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon bicarbonate of soda
  • 1 cup apple and mango juice
  • 2 large eggs
  • 150g plain flour
  • 75g self-raising flour

How to make it

  1. COMBINE fruit, PHILLY, sugar, spices, bicarbonate of soda and juice in a saucepan. Bring to boil, stirring, then cool.
  2. ADD eggs and mix well. Sift in flours and stir until combined. Pour into a 24cm lined and greased springform tin.
  3. BAKE at 180°C for 55-60 minutes or until a skewer inserted in the centre comes out clean.
