Light Feta and Mint Dip

Light Feta and Mint Dip

What you need

  • 220g tub PHILADELPHIA Extra Light Spreadable Cream Cheese
  • 200g soft reduced-fat feta, crumbled
  • 2 tablespoons lemon juice
  • 1/2 red onion, finely chopped
  • 1/2 cup finely chopped mint
  • cracked pepper, to taste
  • 1 tablespoon mint leaves, extra, to garnish
  • 1 Turkish bread, toasted and sliced
  • cucumber sticks, to serve
  • barbequed chipolatas, to serve

How to make it

  1. PLACE PHILLY, feta and lemon juice in a food processor and process until smooth.
  2. SPOON into a bowl along with the onion, mint and pepper and mix well to combine.
  3. CHILL for at least ½ hour before serving to develop the flavours.
  4. SPOON mixture into serving bowl and garnish with extra mint. Serve with Turkish bread, cucumber sticks and chipolatas.
