What you need

  • 2 litres water
  • 1 cup raw sugar
  • 3 kaffir lime leaves (or strips of lime rind)
  • 1 small piece ginger
  • 6 buerre bosc pears, peeled and halved
  • 125g tub PHILADELPHIA Light Spreadable Cream Cheese
  • finely grated rind of 1/2 an orange
  • 2 tablespoons pistachio nuts, chopped

How to make it

  1. PLACE water, sugar, lime leaves and ginger into a large saucepan. Bring to the boil, reduce heat and add pears. Simmer for 20-30 minutes until tender.
  2. REMOVE pears with a slotted spoon and set aside 2 tablespoons poaching liquid.
  3. SIMMER remaining liquid a further 10 minutes to reduce slightly.
  4. COMBINE PHILLY with reduced poaching liquid and rind until smooth.
  5. SERVE pears with a dollop of the PHILLY, reserved poaching liquid and pistachio nuts.
