Lous Creamy Vegetable Bake

What you need

  • 1 tablespoon oil
  • 1 small onion, finely chopped
  • 250ml PHILADELPHIA Original Cream For Cooking
  • 1 cup milk
  • 3 cloves garlic, crushed
  • 125g Parmesan cheese, grated
  • Salt and freshly ground black pepper, to taste
  • 1 orange sweet potato (kumara), peeled and cut into 2mm thick slices
  • 1 celeriac, trimmed and cut into 2mm thick slices
  • 3 parsnips, peeled and cut into 2mm thick slices
  • 1 potato, peeled and cut into 2mm thick slices 

How to make it

  1. HEAT the oil in a frypan and sauté the onion for 3 minutes. Remove, cool slightly and then combine with the PHILLY, milk, garlic, cheese and seasonings.
  2. ARRANGE half the sliced vegetables in a greased 2 litre casserole dish. Pour over half the PHILLY mixture. Repeat with remaining vegetables and PHILLY.
  3. COVER with foil and bake in a moderate oven 180oC for 45 minutes. Remove the foil and cook for a further 30-45 minutes or until the vegetables are tender. Serve immediately.
