What you need

  • 1 1/2 cups sweet biscuit crumbs
  • 80g butter, melted
  • juice and rind of 1 orange
  • 3/4 cup dates, roughly chopped
  • 500g block PHILADELPHIA Cream Cheese, softened
  • 1/2 cup caster sugar
  • 2 eggs, lightly beaten
  • 1 tablespoon cornflour
  • 1/4 cup sour cream
  • 350g can pie apples, drained
  • 1/2 cup shredded coconut, toasted

How to make it

  1. COMBINE biscuit crumbs and butter and press into a lined lamington tin. Chill.
  2. BRING the orange juice and dates to the boil over medium heat. Reduce heat and simmer for 5 minutes or until the dates are soft.
  3. BEAT PHILLY and sugar until smooth. Fold in eggs, cornflour, sour cream and orange rind. Layer the prepared base with the apples and softened dates.
  4. POUR mixture over the apples, sprinkle with coconut and bake at 160°C for 30 minutes or until just set. Serve warm or cold.
