What you need

  • 2/3 cup plain flour
  • 3/4 cup milk
  • 2 eggs
  • 150g PHILADELPHIA Mango Light Cream Cheese
  • 400g pie apple
  • 30g butter
  • 2 teaspoons oil
  • 170g can passionfruit pulp
  • fresh sliced pineapple, to serve

How to make it

  1. WHISK together the flour, milk and eggs until smooth. Chill for 20 minutes. Combine PHILLY and apple.
  2. HEAT 1 teaspoon of butter and ½ teaspoon oil in a non-stick frying pan over medium heat. Pour ¼ of the batter into the pan and cook pancake until lightly browned, then turn and cook other side, remove. Repeat with remaining butter, oil and batter.
  3. SPREAD ¼ of the PHILLY mixture onto each pancake, leaving a 2cm edge uncovered. Fold in sides to make a parcel. Add remaining butter to pan and cook both sides of each parcel for 1-2 minutes to heat through. Serve drizzled with passionfruit pulp and alongside fresh pineapple.
