What you need
2/3 cup plain flour
3/4 cup milk
2 eggs
150g PHILADELPHIA Mango Light Cream Cheese
400g pie apple
30g butter
2 teaspoons oil
170g can passionfruit pulp
fresh sliced pineapple, to serve
How to make it
WHISK together the flour, milk and eggs until smooth. Chill for 20 minutes. Combine PHILLY and apple.
HEAT 1 teaspoon of butter and ½ teaspoon oil in a non-stick frying pan over medium heat. Pour ¼ of the batter into the pan and cook pancake until lightly browned, then turn and cook other side, remove. Repeat with remaining butter, oil and batter.
SPREAD ¼ of the PHILLY mixture onto each pancake, leaving a 2cm edge uncovered. Fold in sides to make a parcel. Add remaining butter to pan and cook both sides of each parcel for 1-2 minutes to heat through. Serve drizzled with passionfruit pulp and alongside fresh pineapple.
