Maple Bacon Bagel with Roast Tomatoes

What you need

  • 8 rashers streaky bacon
  • ¼ cup maple syrup
  • Olive oil spray
  • 12 truss tomatoes
  • Salt and freshly ground black pepper, to taste
  • 4 bagels, split and toasted
  • 100g PHILADELPHIA Light Spreadable Cream Cheese
  • 4 poached eggs, optional

How to make it

  1. BRUSH the bacon with the maple syrup and bake on a rack in a moderate oven 180°C for 10 -15 minutes or until golden and lightly crisped.
  2. MEANWHILE place the tomatoes on a paper lined tray, spray with oil and season. Bake for 10 minutes or until just beginning to split. Allow to cool a little. 
  3. SPREAD the base of the bagels with PHILLY then top with the bacon, tomatoes and an egg if desired, then sandwich together. Serve immediately.
