What you need

  • 220g PHILADELPHIA Spreadable Extra Light Cream Cheese
  • cup coconut cream 
  • ¼ cup icing sugar 
  • 2 tablespoons Malibu liqueur (optional)
  • ¼ small seedless or other watermelon, rind removed, cut into wedges 
  • ¼ rockmelon, skin and seeds removed, cut into wedges 
  • ¼ honeydew melon, skin and seeds removed, cut into wedges
  • Mint leaves, to serve

How to make it

  1. PUT PHILLY, coconut cream, icing sugar and liqueur (if using) in a small food processor. Process until a smooth sauce forms.
  2. ARRANGE the melon wedges on a serving platter.
  3. DRIZZLE with coconut PHILLY sauce and sprinkle with mint leaves. Or serve with the sauce on the side.
