Mixed Berry and Vanilla Bean Semi Freddo

What you need

  • 3 eggs
  • 1/3 cup caster sugar
  • 2 cups frozen mixed berries, thawed and pureed
  • 3 teaspoons vanilla bean paste
  • 500ml PHILADELPHIA Cream For Desserts, a double cream alternative
  • Fresh berries, to serve

How to make it

  1. BEAT together the eggs and sugar with an electric mixer until thick and fluffy then stir through the pureed berries and vanilla. Fold in the PHILLY until well combined.
  2. POUR the mixture into a paper lined 6 cup capacity loaf pan. Wrap well with plastic wrap and freeze for at least 8 hours or overnight.
  3. TURN semifreddo onto a platter. Remove paper. Cut into slices with a hot knife and divide among serving plates. Serve with fresh berries. Serve immediately.
