Mixed Berry Ginger Tartlets

What you need

  • 250g ginger spice biscuits
  • 150g butter, melted
  • 3 cups mixed fresh or frozen berries
  • 1 tablespoon balsamic vinegar
  • 1 cup icing sugar
  • 250g PHILADELPHIA Block Cream Cheese, softened
  • 1/2 cup cream
  • 1/3 cup icing sugar, sifted
  • 1 teaspoon vanilla

How to make it

  1. PROCESS the biscuits in a food processor until they form crumbs. Mix together with the butter, and press into 6 x 10cm loose bottomed tart pans, base and sides.
  2. BAKE at 170°C fan-forced for 10-12 minutes. Allow to cool slightly, then remove from pans.
  3. GENTLY TOSS the berries in the balsamic and icing sugar, refrigerate until required.
  4. MIX together the PHILLY, cream, sugar and vanilla until smooth. Spoon berries evenly amongst tart cases and top with a dollop of PHILLY cream. Enjoy immediately.
