What you need

  • 2 eggs
  • 1/2 cup caster sugar
  • grated rind of 1 orange
  • 250g block PHILADELPHIA Cream Cheese, softened
  • 100g almond meal
  • 1 tablespoon poppy seeds
  • 1 cup gluten free plain flour
  • 2 teaspoons gluten free baking powder
  • 1/4 cup milk
  • 1-2 tablespoons orange marmalade
  • 1/4 cup marmalade, extra, to serve

How to make it

  1. BEAT the eggs and sugar until thick and creamy, fold through the orange rind, half the PHILLY, almond meal and poppy seeds.
  2. SIFT together the flour and baking powder, fold through the mixture alternately with the milk.
  3. SPOON into a greased and base lined 1/2 cup muffin pan to make 10, and bake in a moderate oven 180°C for 20-30 minutes or until cooked and golden.
  4. COMBINE the remaining PHILLY with the marmalade and use as a spread for the muffins. Top with extra marmalade, if desired.
