Pear and Orange Rice Pudding

Pear and Orange Rice Pudding

What you need

  • 3 cups reduced fat milk
  • 3/4 cup short grain rice
  • 2 tablespoons caster sugar
  • 1 teaspoon grated orange rind
  • 3 pears, sliced
  • 1/2 cup unsweetened orange juice
  • 1/4 teaspoon ground cardamom or mixed spice
  • 125g PHILADELPHIA Light Spreadable Cream Cheese

How to make it

  1. BRING milk, rice, sugar and rind to the boil in a large saucepan. Reduce heat and simmer, stirring often for 20-25 minutes until rice is tender.
  2. PLACE pears, orange juice and cardamom in a small saucepan, bring to the boil then simmer 5 minutes or until pears are just tender.
  3. FOLD the PHILLY through the rice mixture. Serve warm, topped with pears and juice.
