What you need

  • 3 medium tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 cup basil leaves, finely shredded
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • 8 thick slices ciabatta, or similar
  • 125g PHILADELPHIA Light Spreadable Cream Cheese
  • 4 rashers rindless bacon

How to make it

  1. COMBINE the tomatoes, onion, basil, balsamic, oil and seasonings. Mix well.
  2. UNDER a hot grill, toast the bread slices until golden and cook the bacon until crispy.
  3. SPREAD PHILLY over each slice of toast, top with tomato mixture, and serve with bacon.
