What you need

  • 1 cup coconut biscuits, crushed
  • 1/4 cup butter, melted
  • 500g PHILADELPHIA Block Cream Cheese, softened
  • 1/2 cup caster sugar
  • 1/2 cup sour cream
  • 1/2 cup pineapple juice
  • 1/4 cup lemon juice
  • 1 1/2 tablespoons gelatine dissolved in 1/3 cup hot water
  • 2 teaspoons Malibu rum (optional)
  • seasonal fruits
  • toasted coconut flakes

How to make it

  1. COMBINE biscuit crumbs and butter. Press into the base of a 20cm spring form pan; chill.
  2. BEAT PHILLY and sugar with an electric mixer until smooth. Add sour cream and beat until smooth. Stir in juices, gelatine mixture and rum until well combined. Pour into prepared base and chill until firm.
  3. DECORATE with fruits and coconut flakes.
