What you need
1 cup water
1/2 cup caster sugar
1 cinnamon stick
1 teaspoon cloves
1 large jar (700g) good-quality whole apricots
1/4 cup (40g) slivered almonds, toasted
125g PHILADELPHIA Light Cream Cheese or PHILADELPHIA Cream Cheese, softened
1 tablespoon vanilla sugar
1 tablespoon lemon juice
How to make it
COMBINE water, caster sugar, cinnamon stick and cloves in a medium sized saucepan over high heat until sugar has dissolved. Bring to boil; reduce heat; and simmer, uncovered, for 20 minutes or until reduced by half.
ADD apricots and simmer until heated through. Remove to serving plate. Top with toasted almonds, a dollop of PHILLY and drizzled with syrup.
