Poached Apricots and Almonds with PHILLY

What you need

  • 1 cup water
  • 1/2 cup caster sugar
  • 1 cinnamon stick
  • 1 teaspoon cloves
  • 1 large jar (700g) good-quality whole apricots
  • 1/4 cup (40g) slivered almonds, toasted
  • 125g PHILADELPHIA Light Cream Cheese or PHILADELPHIA Cream Cheese, softened
  • 1 tablespoon vanilla sugar
  • 1 tablespoon lemon juice

How to make it

  1. COMBINE water, caster sugar, cinnamon stick and cloves in a medium sized saucepan over high heat until sugar has dissolved. Bring to boil; reduce heat; and simmer, uncovered, for 20 minutes or until reduced by half.
  2. ADD apricots and simmer until heated through. Remove to serving plate. Top with toasted almonds, a dollop of PHILLY and drizzled with syrup.
