Poached Eggs on Thick PHILLY

What you need

  • 1 teaspoon vinegar
  • 4 eggs
  • 4 small tomatoes, halved
  • black pepper, to taste
  • 80g block PHILADELPHIA Light Cream Cheese, softened
  • 1 teaspoon chopped chives
  • 50g baby spinach leaves, washed
  • 4 slices thick cut wholegrain bread, toasted

How to make it

  1. BRING a saucepan of water to the boil with the vinegar. Reduce to a slight simmer and add the eggs. Allow to cook for 3-4 minutes, or until cooked to your liking. Remove from the water with a slotted spoon.
  2. PLACE tomatoes onto an oven tray, sprinkle with pepper. Place under a hot grill for 5 minutes until heated through.
  3. COMBINE PHILLY with chives and pepper until smooth. Spread over each slice of toast and top with spinach leaves and egg. Serve with a grilled tomatoes.
