Prawn Bisque PHILLY

What you need

  • 1 tablespoon oil
  • 1 onion, finely diced
  • 1 carrot, finely diced
  • 1 stick celery, finely diced
  • 3 bay leaves
  • 2 thyme sprigs
  • 2 tablespoons tomato paste
  • 3½ cups fish or vegetable stock
  • ¼ cup brandy
  • 250g PHILADELPHIA Spreadable Cream Cheese
  • ¼ cup risoni
  • 500g green prawn cutlets, deveined
  • Pinch cayenne pepper
  • Crusty bread, for serving

How to make it

  1. HEAT oil in a large saucepan. Add vegetables, bay leaves and thyme and sauté for 3-4 minutes without colouring. Stir in tomato paste, stock and brandy and bring to the boil.
  2. ADD PHILLY and risoni and bring to the boil. Reduce heat and simmer until the risoni is tender. 
  3. ADD prawn cutlets and cayenne and simmer for 5 minutes or until prawns are cooked. Remove bay leaves and thyme. Serve with crusty bread.
