Quick Lamb and Apricot Tagine

What you need

  • 1 tablespoon oil
  • 2 medium onions, thinly sliced
  • 2 teaspoons ground ginger
  • 2 teaspoons turmeric
  • 2 teaspoons cinnamon
  • 750g lamb fillets or steaks, sliced
  • 1 1/4 cups vegetable stock
  • 1 1/4 cups dried apricots
  • 150g tub PHILADELPHIA Spreadable Cream Cheese
  • 1/2 cup coriander, roughly chopped
  • cooked couscous, to serve

How to make it

  1. HEAT oil in a large heavy based saucepan. Add onion and spices and cook until onion has softened. Add lamb and cook until browned.
  2. ADD stock, apricots and PHILLY and cook, stirring occasionally, for 10 minutes or until lamb is just cooked through and sauce is smooth and thickened.
  3. STIR in coriander and serve with couscous.
