What you need
2 tablespoon vegetable oil
500g chicken thigh fillets, cut into 2 cm cubes
2 large onions, sliced
½ cup tikka paste
440g chopped tomatoes
300g can tomato soup
125g PHILADELPHIA Light Spreadable Cream Cheese
4 cloves garlic, crushed
1 teaspoon brown sugar
Steamed rice, for serving
Coriander leaves, for serving
How to make it
HEAT half the oil in a frypan and brown the chicken well. Remove from the pan and set aside.
HEAT the remaining oil in the pan and sauté the onion for 3-5 minutes or until softened. Reduce the heat then add the paste and cook for 1-2 minutes until fragrant. Return the chicken to the pan with the tomatoes, soup, PHILLY, garlic and brown sugar then simmer for 10-15 minutes or until the chicken is cooked through.
SPOON the chicken over the rice in serving bowls and sprinkle with coriander leaves. Serve immediately.
