What you need

  • 1 cup biscuit crumbs
  • 1/3 cup butter, melted
  • 500g PHILADELPHIA Block Cream Cheese, softened
  • 1/2 cup caster sugar
  • 1/4 cup lemon juice
  • 2 tablespoons grated lemon rind
  • 1 1/2 tablespoons gelatine dissolved in 1/4 cup hot water
  • 1/2 cup passion fruit pulp
  • 1/2 cup strawberry puree
  • assortment of lollies

How to make it

  1. COMBINE biscuit crumbs and butter. Press into the base of a 22cm spring form pan; chill.
  2. BEAT PHILADELPHIA until smooth, add sugar, lemon juice, lemon rind, gelatine mixture and blend well.
  3. DIVIDE mixture in half. Add 1/2 cup passionfruit pulp to one portion. Pour into prepared crumb crust and chill until firm (15 minutes).
  4. ADD 1/2 cup strawberry puree to the remaining cheesecake mixture. Pour over firm passionfruit mixture; chill.
  5. DECORATE top of cheesecake with assorted lollies e.g. smarties to create a clowns face.
