What you need
1 cup biscuit crumbs
1/3 cup butter, melted
500g PHILADELPHIA Block Cream Cheese, softened
1/2 cup caster sugar
1/4 cup lemon juice
2 tablespoons grated lemon rind
1 1/2 tablespoons gelatine dissolved in 1/4 cup hot water
1/2 cup passion fruit pulp
1/2 cup strawberry puree
assortment of lollies
How to make it
COMBINE biscuit crumbs and butter. Press into the base of a 22cm spring form pan; chill.
BEAT PHILADELPHIA until smooth, add sugar, lemon juice, lemon rind, gelatine mixture and blend well.
DIVIDE mixture in half. Add 1/2 cup passionfruit pulp to one portion. Pour into prepared crumb crust and chill until firm (15 minutes).
ADD 1/2 cup strawberry puree to the remaining cheesecake mixture. Pour over firm passionfruit mixture; chill.
DECORATE top of cheesecake with assorted lollies e.g. smarties to create a clowns face.
