Roasted Garlic Hummus

What you need

  • 1 bulb of garlic
  • 2 tablespoons olive oil
  • 1½ teaspoons cumin
  • 1 teaspoon ground coriander
  • 440g can chickpeas, rinsed and drained
  • 250g PHILADELPHIA Spreadable Light Cream Cheese
  • 1-2 tablespoons sweet chilli sauce
  • Salt and pepper, to taste
  • Turkish bread or pita bread, toasted for serving

How to make it

  1. CUT the top off the garlic and place on a baking tray, drizzle with half of the oil and bake in a moderate oven 180°C for 30 minutes or until softened. Cool then squeeze garlic from the skin. 
  2. HEAT the remaining oil in a small saucepan and cook the spices over a low heat for 1-2 minutes or until fragrant. Add the chickpeas and cook a further minute.
  3. TRANSFER to a food processor with the garlic, PHILLY, chilli sauce and seasonings and process until smooth. Spoon into a serving bowl. Chill. Serve with toasted bread.
