What you need
1.5 kg leg lamb
125g PHILADELPHIA Block Cream Cheese, cubed, softened
1 cup fresh breadcrumbs
1/4 cup craisins
1/4 cup mint leaves, finely sliced
1 tablespoon fresh rosemary leaves
2 cloves garlic, finely sliced
Finely grated rind of 1 orange
Salt & pepper, to taste
How to make it
COMBINE PHILLY, breadcrumbs, craisins, herbs, garlic, orange rind and seasonings.
MAKE about 6 slashes into the lamb approx. 8-10cm in length, cutting right down to the bone. Press stuffing mixture into each cavity. Tie the lamb back together with string. Drizzle with oil.
BAKE at 190ºC for 1.5-2 hours. Allow to rest covered for 10 minutes before slicing.
SERVE with seasonal vegetables and meat juices.
