Roasted Lamb with Craisin Stuffing

What you need

  • 1.5 kg leg lamb
  • 125g PHILADELPHIA Block Cream Cheese, cubed, softened
  • 1 cup fresh breadcrumbs
  • 1/4 cup craisins
  • 1/4 cup mint leaves, finely sliced
  • 1 tablespoon fresh rosemary leaves
  • 2 cloves garlic, finely sliced
  • Finely grated rind of 1 orange
  • Salt & pepper, to taste

How to make it

  1. COMBINE PHILLY, breadcrumbs, craisins, herbs, garlic, orange rind and seasonings.
  2. MAKE about 6 slashes into the lamb approx. 8-10cm in length, cutting right down to the bone. Press stuffing mixture into each cavity. Tie the lamb back together with string. Drizzle with oil.
  3. BAKE at 190ºC for 1.5-2 hours. Allow to rest covered for 10 minutes before slicing.
  4. SERVE with seasonal vegetables and meat juices.
