Smoked Chicken, Lime and Coriander Quiche

What you need

  • 125g PHILADELPHIA Block Light Cream Cheese, softened
  • 7 eggs, lightly beaten
  • 1 cup grated tasty cheese
  • 1/2 cup cream
  • 1/4 cup chopped coriander
  • 1 tablespoon lime juice
  • zest of 1/2 lime
  • 1 small red onion, sliced
  • 2 cups (70g) spinach leaves
  • 300g smoked chicken, cut into chunks
  • 1/2 roasted red capsicum, thinly sliced

How to make it

  • MIX PHILLY with a spoon until smooth. Whisk in eggs, half of cheese, cream, coriander and lime juice and zest.
  • SAUTE red onion for 2 minutes until translucent. Add spinach, chicken and red pepper, stir until just heated through.
  • SPOON chicken mix into the base of a 10 x 20cm baking dish. Pour PHILLY custard over the top. Sprinkle with remaining cheese. Bake at 180°C for 30 minutes or until just set. Serve warm or cold.
