Spinach and White Bean Dip

Spinach and White Bean Dip

What you need

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped n
  • 1/2 teaspoon fennel seeds
  • 2 x 400g cans cannellini beans, rinsed and drained
  • 50g baby spinach leaves
  • 125g PHILADELPHIA Block Cream Cheese, softened
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Oil, extra, for drizzling¬†¬†
  • Blanched vegetables, to serve
  • Lavosh, to serve

How to make it

  • HEAT oil in a heavy based pan over low heat. Add onion, garlic and fennel and cook for 5-6 minutes until onion has softened.
  • ADD beans and spinach and cook a further 2-3 minutes. Remove from heat and allow to cool slightly.
  • PROCESS bean mixture, PHILADELPHIA, lemon juice and seasonings until smooth. Transfer to serving bowl, drizzle with extra oil and serve with blanched vegetables and lavosh.¬†
