What you need
1 tablespoon olive oil
1 large onion, finely chopped
2 cloves garlic, finely chopped n
1/2 teaspoon fennel seeds
2 x 400g cans cannellini beans, rinsed and drained
50g baby spinach leaves
125g PHILADELPHIA Block Cream Cheese, softened
1 tablespoon lemon juice
Salt and pepper, to taste
Oil, extra, for drizzling
Blanched vegetables, to serve
Lavosh, to serve
How to make it
HEAT oil in a heavy based pan over low heat. Add onion, garlic and fennel and cook for 5-6 minutes until onion has softened.
ADD beans and spinach and cook a further 2-3 minutes. Remove from heat and allow to cool slightly.
PROCESS bean mixture, PHILADELPHIA, lemon juice and seasonings until smooth. Transfer to serving bowl, drizzle with extra oil and serve with blanched vegetables and lavosh.
