What you need

  • 1/2 sponge, cut in half horizontally
  • 1 1/2 tablespoons gelatine dissolved in 1/4 cup water
  • 500g PHILADELPHIA Block Cream Cheese, softened
  • 1/2 cup caster sugar
  • 1/4 cup lemon juice
  • 1/2 cup mango puree
  • 1/2 cup passionfruit pulp
  • 1/2 cup cream, lightly whipped
  • remaining half sponge

How to make it

  • PLACE sponge slice in the base of a 18cm spring form pan.
  • STIR gelatine into cold water, heat in saucepan (or microwave on HIGH for 30 seconds) until dissolved.
  • BEAT PHILLY until smooth, add sugar, lemon juice, mango puree, passionfruit pulp, whipped cream and gelatine mixture.
  • POUR into prepared base. Allow to chill until firm. Top with remaining half sponge, cut into wedges. Dust with sifted icing sugar.
