Stuffed Mushy Pea Chicken

What you need

  • 1 cup green peas, frozen or fresh
  • 1/2 small red onion, finely chopped
  • 60g PHILADELPHIA Block Cream Cheese, softened
  • 1/4 cup fresh breadcrumbs
  • 1 tablespoon mint leaves, torn
  • salt and pepper, to taste
  • 4 chicken marylands or fillets
  • 20g butter, melted
  • 2 clove garlic, halved

How to make it

  • COOK peas in boiling water for 5 minutes or until just tender. Transfer to a food processor with onion, PHILLY, breadcrumbs and mint leaves. Process until peas are still lumpy. Season to taste.
  • GENTLY loosen chicken skin and push mushy pea mixture under skin.
  • MELT butter with garlic and brush over chicken. Bake at 180°C for 25-30 minutes or until chicken is well browned and cooked.
