What you need
1 cup green peas, frozen or fresh
1/2 small red onion, finely chopped
60g PHILADELPHIA Block Cream Cheese, softened
1/4 cup fresh breadcrumbs
1 tablespoon mint leaves, torn
salt and pepper, to taste
4 chicken marylands or fillets
20g butter, melted
2 clove garlic, halved
How to make it
COOK peas in boiling water for 5 minutes or until just tender. Transfer to a food processor with onion, PHILLY, breadcrumbs and mint leaves. Process until peas are still lumpy. Season to taste.
GENTLY loosen chicken skin and push mushy pea mixture under skin.
MELT butter with garlic and brush over chicken. Bake at 180°C for 25-30 minutes or until chicken is well browned and cooked.
