What you need
250g sweet potato, peeled, thinly sliced
2 tablespoons tomato paste
4 small oval pita pockets
125g PHILADELPHIA Block Cream Cheese, softened, cut into small pieces
1/3 cup semi dried tomatoes
4 slices pancetta, sliced
1 tablespoon fresh thyme leaves
2 teaspoons oil
How to make it
PLACE sweet potato into bowl with a splash of water, cover and cook on high for 2 minutes, until tender.
SPREAD tomato paste over each pita pocket and top with sweet potato, PHILLY, tomatoes, pancetta and thyme. Place onto an oven tray, and drizzle with oil.
BAKE at 180°C fan-forced for 10 - 12 minutes until base is crispy and pizza is heated through.
