Sweet Potato & Pancetta Pizzas

What you need

  • 250g sweet potato, peeled, thinly sliced
  • 2 tablespoons tomato paste
  • 4 small oval pita pockets
  • 125g PHILADELPHIA Block Cream Cheese, softened, cut into small pieces
  • 1/3 cup semi dried tomatoes
  • 4 slices pancetta, sliced
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons oil

How to make it

  • PLACE sweet potato into bowl with a splash of water, cover and cook on high for 2 minutes, until tender.
  • SPREAD tomato paste over each pita pocket and top with sweet potato, PHILLY, tomatoes, pancetta and thyme. Place onto an oven tray, and drizzle with oil.
  • BAKE at 180°C fan-forced for 10 - 12 minutes until base is crispy and pizza is heated through.
