Sweet Potato Spice and Apple Soup PHILLY

What you need

  • 2 tablespoons oil
  • 2 large onions, chopped
  • 800g orange sweet potato (kumara), peeled and chopped
  • 2 teaspoons garam masala
  • 2 large Granny Smith apples, peeled and chopped
  • 1.5 litres chicken or vegetable stock
  • 2 tablespoons chopped coriander
  • 250g PHILADELPHIA Spreadable Cream Cheese
  • Salt and freshly ground black pepper, to taste¬†

How to make it

  1. HEAT the oil in a stockpot and gently cook the onion for 5 minutes or until softened. Add the potato and garam masala, cover and cook for 6-8 minutes. Add the apple, cook 2-3 minutes then add the stock and coriander. Simmer, half covered, for 20 minutes or until potato is tender. Cool slightly.
  2. Blend or process the soup until smooth. Return to the stockpot then add the PHILLY and stir through until well heated. Season to taste. Ladle into bowls and sprinkle with apple and coriander. Serve immediately.
