What you need

  • 1 (220g) frozen shortcrust pastry case
  • 2 tablespoons butter
  • 2 onions, sliced
  • 2 teaspoons brown sugar
  • 125g PHILADELPHIA Block Cream Cheese, softened
  • 2 eggs, lightly beaten
  • 1/4 cup cream
  • salt and pepper, to taste
  • 50g blue cheese or feta, crumbled
  • 1/4 cup shredded Parmesan cheese

How to make it

  • PRICK pastry case all over with a fork. Bake in a hot oven 200°C for 5-8 minutes or until just golden.
  • MELT the butter and saute the onions and sugar over a low heat for 8-10 minutes or until golden. Cool.
  • COMBINE the PHILLY, eggs and milk and beat until smooth, season to taste. Spoon the onions into the pastry case, pour over the custard and sprinkle with the cheeses. Bake in a moderate oven 180°C for 20-30 minutes or until the filling is set and golden. Slice and serve warm or cold.
